Sausage Bun “prepared” by 2 years old 

This is my very first time allowing my 2 years old to enter the kitchen..usually, we have been prohibiting her from entering. But, ever since we came to UK , my almost 4 years old nephew is free to enter the kitchen, hence my girl follows. Since she gets to go into the Kitchen, i decided to let her help me while i bake! She’s still fairly young to help with reading the weighing scale but she is able to help to pour in the ingredients and get the Thermomix to work by simply pressing the buttons…


Hub almost fainted seeing that i allowed my girl to “bake” but he thinks it is a good practice! haha…

Sausage Buns! * requested by her cousin*
Ingredients for bread dough:

270g Milk

2 teaspoon yeast

60g sugar

500g bread flour

1 teaspoon salt

4 pcs egg yolk

50g butter
Egg wash:

1 Pcs egg mixed with 1 tablespoon water
Steps:

1. Add milk, yeast, sugar into TM bowl, mix 40 seconds/37degrees/speed3

2. Add in bread flour, salt and egg yolks. Mix well 30sec/37degrees/speed 6

3. Add in butter and knead 5 min

4. remove dough and let it rest in a bowl. Cover with wet cloth. Let it rise for an hour or till double in size

5. punch down to remove the air bubbles. Shape into buns . Add in either sausage/any other ingredients, place them on a baking pan.Proof for another 45 minutes.

6. Preheat oven to 170 degrees, bake for 15 min. Remove and brush the egg wash, bake for another 3-5 min/till brown.

Tadaaa! they are slightly burnt because i brushed the egg wash from the beginning! i didn’t know we can only brush the egg wash few minutes before it is ready! arghh, but luckily it is still very soft and yummy!

I must say, my 2 years old’s first kitchen project is a big big sucess! Well done, my baby girl!

Sweet Potato Man Tou


Very similar to the Pumpkin Mantao i made earlier, just different shape and replaced the Pumkin with Sweet Potato.

Super easy and you can prepare a day earlier, so for breakkie, just reheat them and serve! easy peasy! so good that my little nephew requested for more the next day, but too bad, they finished up within a day!


Ingredients A:

70 g steamed sweet potato

70 g water

30 g sugar

15 g oil

1 tsp yeast

Ingredients B:

250g plain flour

1/2 tsp salt


Steps:

1. Add ingredients A into the Thermomix Bowl, mix 30 sec/37 degrees/speed 3

2. Add in Ingredients B, 30 sec, speed 6 then knead for 2 min

3. Remove the dough to reshape. Let it proof for at least 30 min

4. Steam for 12 min/Varoma/Speed 2

A healthy breakfast or snack for all including toddler, just reduce the amount of sugar if you like.  Also, to make it more interesting, you may add in redbean to make it red bean man tou or kaya to Kaya Man Tou. Just be creative!

Sambal Ikan Bilis

Nothing beats a plate of warm coconut rice with spicy Sambal in the cold weather! this is soooo comforting for mum and i that we ate it for 3 meals!!!! yes, 3 meals in a row… but of course we ate the sambal with different staple… First was with rice, then we had it with bread and the mum used the sambal to fry with noodles …


It is super oily but i needed the oil to fry the ingredients. Simply remove the oil after cooking! 🙂

Ingredients A:

40 g dried chillies ( i do not have fresh chillis here , else you can use 30g dried chilli and 30 fresh red chilli)

2 pcs of chilli padi

150g dried shrimps ( because i do not have belachan in London, so i just chuck in some dried shrimps)

100g oil

80g big onion/shallots

Ingredients B:

80g big onion /sliced

200g Ikan Bilis/anchovies ( oven baked/fried till crispy)

60g sugar

80g Asam Jawa Juice

Steps:

1. Place ingredients A to blend 20sec/speed 8

2. Saute the ingredients A till fragrant 20min/Varoma/Speed2

3. Add in ingredients B , 8 min/Varoma/reverse spoon stiring

I really love this recipe. it is better than the Nasi Lemak Makcik’s Sambal because it is so fragrant and i simply love the crispy Ikan Bilis! Thermomix is really awesome! if only i had it during my Uni time in Canberra!! super homesicked when i was in Australia for 4 years! always had to travel to Chinatown in Sydney to hunt for Asian food! If i were to own a Thermomix back then, life would be super different! Maybe i will end up being a Caterer for Students!? or opened an Asian food stall in the Campus?

Bak Tong Gou / Chinese White Honeycomb Cake 


Since i’m in London now, i’m feeling a tad homesick-ed… So, i’ve been making local delights that reminds me of home!

Honestly, this is my second attempt on Bak Tong Gou, the first time i made was back in Singapore and it tasted funny! this time round, it is just perfect! ok, i guess i’ve i double the portion or steam it in a small baking tin, the outcome will be prettier?

hehe, here’s the recipe:

Ingredients A:

1/2 tsp yeast

Ingredients B:

140 g rice flour

150g water

Ingredients C:

100g Sugar

150g Water

Steps:-

1. Boil ingredients C at 100degrees, speed 2 till all the sugar disolves. Leave it to cool down completely before proceeding to step 2.

2. Add in ingredients B and C to the sugar solution that has cooled down, mix well , 1 min, speed 2

3. Cover and leave it to rest for 2.5 hours, you should see lots of bubbles after 2.5 hours.

4. give it a quick mix before pouring it to a oil-ed baking tin/plate

5. Steam for 25 min/Varoma/speed 2

6. done! do not attempt to cut when it is hot…

Happy trying! substitute white sugar with brown sugar and you’ll get Hak Tong Gou/Brown Sugar Cake 🙂

Pandan Chiffon Cake

Check out my pandan chiffon cake!! *super proud* …. hahah my second successful production from my Sister’s kitchen in London…

It is not easy to get fresh pandan leaves and coconut milk.. but i was lucky… managed to get hold of some pandan leaves, but had to make do with canned coconut milk…

was super worried cos it is my first time using her oven… i just had to pray hard that it will turn out fine! plus, my daughter was super sticky when i was baking.. i missed out some steps.. luckily, it turned out fine… except that the cake de-moulded on its own… 😦 so it sank a little bit…

Ingredients A:

7 pieces egg yolk

70 grams castor sugar

3 tbsp coconut milk

3tbsp oil

3 tbsp pandan juice

100g super fine flour

1 tsp baking powder

Ingredients B:

7 pieces egg white

70 grams castor sugar

1 tsp cream of tar tar

Steps:

1.PLace ingredients A into Thermomix bowl, mix it for 3.5min/speed4

2. Pour into a clean mixing bowl and leave aside

3. In a dry and clean thermomix bowl, insert the butterfly, add in egg white, whisk 4min/37deg/speed4, add in cream of tartar after 1.5min, then gradually add in the sugar.

4. divide the egg white mix into 3, gently fold it into the egg yolk mix. Pour the batter into a dry chiffon cake mould. Bake in preheated oven at 180degrees for 1 hour 5 min ( please adjust your baking time accordingly), since it de-moulded on its own, i will try to bake 10 minutes longer next time.

5. Once it is ready, remove from oven and invert the tin immediately to cool, ready to serve!

Next time round, i will try to bake Orange Chiffon Cake! or maybe Black Pearl Chiffon Cake? 🙂
