MIA!

Where have i been? honestly, i’ve been really busy, first was the girl’s school was down with Hand Foot Mouth Disease hence i kept my girl at home with me for almost 2 weeks.

I also took in some orders for Chinese new year, on top of that, as you know, need to run lotsa errands , buy stuffs for the family and friends + spring cleaning!

this year round, i do not have time to queue for our favorite Lim Chee Guan Bak Kua, so i just had to make do with Cookies from Cookie Museum! they’re soooo yummy yet so costly… 😦 but once a year, ok la! right?

I have not stopped cooking and Good news!!! i’m officially a Thermomix advisor… i love this new job as i truly love my Thermomix! it has helped me soooo much!! never a minute i regretted for bringing it home!! Many complain that it is costly, but if you know what it can do for you and it has sooo many functions… you’ll think this is a cheap machine!

i will be uploading more recipes soon. Of late, i just upload those photos and recipe on my Facebook, but i will need some time to upload them to this blog! stay tune ok?

Confinement food Part-II – Black Vinegar Pig Trotter

Here comes confinement food part-II !!! 🙂

I need to admit that this bottle of Vinegar is left over from my confinement 2 years ago! But, do not worry, they’re still good! 🙂

Hubby and I do not appreciate fatty meat but i know we need some good amount of fats to make good black vinegar pig trotter! so, i went to the went market the other day, i asked the butcher uncle for  a “skinny pork trotter” ! uncle gave me the “what’s wrong with you!” look but he explained that no point choosing a pig trotter that’s too small, cos they’re too fat and not much lean meat! Later on, uncle suggested that i get the meat right above the pig trotter, he calls them Pig trotter meat. They have lots of lean meat yet not too lean that it will be dry.

Here’s how i prepared this dish.

Ingredients:

  • 500g Pig trotter (blanch to remove the scums)
  • 100g ginger
  • 50g sesame oil
  • Hard boiled eggs

Seasonings:

  • 350g Black Vinegar
  • 200g Water
  • 50g Light Soya Sauce
  • 50g Sugar/Rock Sugar/Gula Melaka

Steps:

  1. Fry the ginger in sesame oil till fragrant 8 min/varoma/reverse spoon stir
  2. Add in pig trotter  and all the seasoning except sugar to cook for 50 min/Varoma/Reverse spoon stir (or till the meat is soft) , add in hard boiled eggs & sugar in the last 5 minutes.

Please note that if you’re making this for your confinement, you gotta use more ginger and preferably Bentong Old Ginger. Then use Rock Sugar/Gula Melaka instead of white sugar. Also, the ratio of vinegar:water should be higher.Of course, use sesame oil instead of normal cooking oil.

Nyonya Acar / Pickled vegetables Nonya Style

During my trip back to KL last round, the first thing my mum was was what do we want to eat for lunch? Guess what did we ended up having?

We went to Madam Kwan’s at 1utama because i wanted to eat their Acar!!! 🙂 yes, we usually would order extra serving of Acar and that will cost like rm8 (sorry, can’t remember)… but trust me, their acar is super addictive and yummy!!!!!!!!!

And happened to be around the same time, there was a video on FB showing how to make Acar, it looked simple but deep down my heart i know i wouldn’t bother doing it because it is too tedious!!!

But, guess what?! after breakkie this morning, i just suddenly decided that i should try making my own Acar!! dun ask me what strike my mind but i just went ahead to grab cucumbers, carrots and cabbage! i didn’t even bother checking the recipe! then i came home happily! then i realize i missed out PINEAPPLES!!!!!!!!! Nvm…. i decided to continue with my Acar plan despite the missing pineapples…

Tadaa!! it is actually quite simple! it didn’t take up too much of my time! i cut up the vegetables then let them rest after rubbing salt in… then started to prepare the paste using my thermomix! easy peasy when you have a thermomix! without it, you’ll probably have to use a pestle & mortar or food processor… do note that you’ll have to blend candle nut which is quite hard too…

anyway, i’m glad that i made it! recipe is as follows…

Recipe for the paste:

  • 4 red chilli
  • 2 candle nut
  • tumeric powder
  • belachan
  • dried shrimps
  • 5-6 shallots
  • oil

The rest of the ingredients:

  • Cucumber
  • Carrots
  • Cabbage
  • Sesame Seeds
  • Crushed Peanuts
  • Optional : Long Beans/Pineapples
  • Lemon Juice

Steps:

  • 1.cut up all the vegetables, sprinkle salt over and let it rest for 30 minutes. After that, give them a good squeeze to remove the water!
  • 2. To prepare the paste, pour everything into the Thermomix bowl, turbo 1sec x 2 , then add oil to fry till fragrant.  5 min/varoma/reverse spoon stirring
  • 2. after that pour in crushed peanuts and lemon juice then give it a good stir and finally add in the vegetables + sesame seeds.. mix well then you’re ready to serve! however, it will taste better if you let it rest over night! 🙂
