Minced Meat & Mushroom (for Pan Mee)

  
This minced meat + mushroom plays a very important role in a good bowl of Pan mee. It is so good that i can eat it on its own! πŸ™‚ 

Here’s the ingredients needed:

Minced Meat ( pork/chicken) 

Dried Shiitake Mushroom ( soaked and cut up to thin slices)

Onion/Garlic 

Oil

Seasoning – Oyster sauce, Soy Sauce, Shao Xing Rice Wine, Pepper

Steps:

1. Chop up the Onion/Garlic Turbo1sec 

2. Add in Minced meat and mushroom, stir fry for 4.5min/Varoma/Reverse Speed 1 , at the last minute, stir in the seasoning through the Measuring Cup hole. 

** if you’re using fresh sliced meat, you can mince it by putting it in to chop together with the Garlic/Onion.

2. Add in Oil, sautee for a good 3min/Varoma/Speed 1

Easy Chow MeinΒ 

  
When mummy is lazy, the toddler will have simple CHow Mein for dinner! πŸ™‚ 

Throw in lots of vegetables/mushrooms, some meat… you’ll have a plate of pipping hot fried noodles served in less than 10 minutes…. not to forget it is a good way to get your fussy eater to eat the vegetables….

The steps if you’re interested:

1. Stir fry the Garlic and oil till fragrant 3min/Varoma/Speed 1.5

2. All in all the vegetables/meat, 4 min/Varoma/Reverse spoon stiring

3. Insert the butterfly and add in the noodles ( the trick is to add in all the seasoning with the noodles, and mix well before putting them in the Thermomix bowl to fry. i added dark soy sauce, oyster sauce, soy sauce and pepper only). 2.5 min/Varoma/reverse spoon stiring

Dry Chilli ( for Chilli Pan Mee)

    
Over the weekend, hubby drove us all the way to Macpherson Road to try out the Kin Kin Chilli Pan Mee. We’ve tried this many times in KL but not their branch in Singapore. Hub gave 2 thumbs up after his bowl of Dry Pan Mee and even asked if i know how to make the Chilli! πŸ™‚ I rarely see hub being so interested in Chilli! 

On top of that, the girl is loving her Pan Mee..so i was determined to try to make Pan Mee at home. While hub likes the Dry Chilli with dry pan mee, i also put in a little more effort to prepare that for him! πŸ™‚ Unfortunately, to fry this dry chilli, it is not as simple as i thought, the recipe i saw said fry for 30 min, but i ended up frying it for 50 min! luckily, i had my Thermomix to help! else, i will be screaming now from the aching arms!

Here’s my modified recipe:

1 handful of dried shrimps (soaked and dried with towel)

4 fresh red chillis 

2 medium size red onions

oil 

Steps:

1. Chop out all the ingredients except oil Turbo 1 sec

2. add in oil, fry for 30 min/100deg/Spoon stiring , then up the heat to 20min/Varoma/Spoon stiring

  
Remember to constantly open up the cover to check if it is burnt, adjust the cooking timing accordingly.
